Lunch: 2 slices light whole wheat toast, 2 eggs, 1/4 cup oatmeal, 10 sprays Parkay

Snack: 1 Weight Watchers Ice Cream Bar-120 calories

Dinner: 8 oz shrimp, 2 TB sugar free marmalade, 1/2 cup pink beans, 2/3 cup corn, spinach, 1 tb Greek vinaigrette, 6 olives
Insulin: 11 humalog

Snack: 3 dates

Total Fiber: 28.5
