Lunch: 2 slices light wheat bread, 2 slices fat free american cheese, 1/4 cup low fat cottage cheese, 1/2 cup tomato soup, 1/2 cup coleslaw, 1 mini bag popcorn

Snack: 3 apricots
Dinner: 12 oz potatoes, 4 oz ground turkey, 1 cup onions, 1/4 cup low fat cottage cheese, 1 tb fat free cream cheese, 1 tb low fat butter, 3 tb fat free sour cream, 1/2 cup coleslaw
Insulin: 10 humalog
Snack: 3 dates
Total Fiber: 29.5 gms
