Lunch: 2 slices light whole wheat bread, 2 oz grilled chicken, 1 cup butternut squash soup
Insulin: 6 humalog
Snack: 1/2 banana
Dinner: 1 cup stir fry vegetables, 3 oz rice noodles, 1 cup petite shrimp, 2 eggs
Insulin: 10 humalog
Snack: 1/2 banana, 1/2 cup low fat cottage cheese
Total Fiber: 32
