Lunch: 4 oz shrimp-grilled, 1/2 cup pink beans, 1/3 cup corn, 1 tb sugar free marmalade, and Dijon mustard

Snack: 3 dates

Dinner: 1 oz goat cheese, 1 tb low fat butter, 3 tb fat free sour cream, 4 oz ground turkey, 12 oz potatoes, 1/2 cup onions
Insulin: 10 humalog

Snack: 3 dates

Total Fiber: 25.5 gms
