Breakfast: 2 slices light toast, 1 pear, 1 tb apricot sugar free jam
Insulin: 8 humalog/14 NPH

Snack: 3 dates

Lunch: 2 oz rice noodles, Chinese cabbage, Chinese veggies, 1 cup small shrimp, 1 egg, chicken broth
Insulin: 6 humalog

Snack: 3 dates

Dinner: 3 stuffed shells, 1/2 cup tomato sauce, salad, 3 artichokes, 1/2 TB Greek vinaigrette
Insulin: 10 humalog

Snack: 1/2 cup chocolate peanut butter cookie dough skinny cow ice cream

Total Fiber: 30 gms
