Breakfast: 2 slices light whole wheat toast, 1 tablespoon apricot jam, 1 pear
Insulin: 8 humalog/14 NPH

Snack: 3 apricots

Lunch: 2/3 cup peas, water-chestnuts, lettuce, 3 tablespoons fat free mayo, 3/4 ounce mozzarella cheese, 1 egg white, 1/2 ounce turkey, 1 slice lemon grove coconut pie
Insulin: 6 humalog

Dinner: 2 ounce ground turkey, 1/2 cup pink beans, 1 ounce reduced fat cheddar cheese, 1/2 cup onions, 2 tortillas, 2 tablespoons fat free sour cream, 1 tablespoon guacamole, 2/3 cup green beans
Insulin: 10 humalog

Snack: 3 apricots

Total Fiber: 28 gms
