Breakfast: 2 slices light whole wheat toast, 1 tablespoon sugar free apricot jam, 1 pear
Insulin: 8 humalog/14 NPH

Snack: 3 apricots

Lunch: 2 slices light whole wheat bread, 1 1/2 tablespoon fat free mayo, 1 tablespoon relish, 2 ounces salmon, 2/3 cup peas, 1 1/3 cup green beans
Insulin: 6 humalog

Snack: 3 apricots

Dinner: 3 ounces ground turkey, 1 ounce reduced fat cheddar cheese, 1/2 cup onions, 2 tortillas, 2 tablespoons fat free sour cream, 1 tablespoon salsa, 1 tablespoon guacamole, 2/3 cup green beans
Insulin: 10 humalog

Snack: 1 dannon carb control raspberry yogurt

Total Fiber: 30 gms
