Lunch: Healthy Jo, 2 slices light whole wheat toast, 2/3 cup peas, 1 1/3 cup green beans
Insulin: 6 humalog

Dinner: 4 stuffed pasta shells, 1/2 cup spaghetti sauce, 3 artichoke hearts, 1 tablespoon fat free Italian dressing, lettuce
Insulin: 10 humalog

Snack: Fat Free Yogurt

Total Fiber: 29 gms
